Oven Dried Tomatoes

This time of year we are putting lots of stuff in jars. One of the easiest things to do is oven dry tomatoes over night and then pack them in jars with sea salt, olive oil and herbs. This treatment will make the fruit last in the refrigerator for weeks. We pull them out as we see fit, let them come to room temperature and then serve them on salads, warmed with roasted meats or simply with bread and cheese. Below is a before and after shot of a tray of Early Girl tomatoes given the treatment in a low oven overnight.


Place the tomatoes cut side up drizzled with olive oil and sprinkled with fresh thyme.
 Once dried, these can be carefully placed in a jar, topped off with olive oil and placed in the fridge until ready for use.
