“Traditional Mexican Barbacoa is a laborious & lengthy culinary undertaking. It starts with digging a fire pit & burying primal cuts of goat, mutton or beef, covered with agave leaves. The meat cooks for many hours, through a combination process of steaming & roasting. You can find this rustic, slow & low style of cooking meats everywhere from the Texas Hill Country, across the Rio Grande & into all parts of Mexico.
However, I am not planning on burying an entire cow’s head for this week’s Prix Fixe;
I plan to recreate that complex flavor profile with my own spice rub, fresh banana leaves & large pieces of 5 Dot Ranch beef shoulder, cooked all day until meltingly tender. “
