It was a big Sunday night rocknroll show at the William Randolph Hearst Greek Theatre in Berkeley, Ca and we were there to make sure everyone backstage was well fed.
We make sure to have plenty of house made pickles and preserves to serve up with our local artisan cheese boards. Above is a jar of roasted and marinated sweet peppers from Garden Earth Farm in Santa Rosa, Ca.
Grilled Bavette of Beef on Baguette with Lemongrass Mayonnaise, Early Girl Tomato & Basil. Yes we grill all of our meats over natural hardwood charcoal; usually mesquite. We do make exceptions for seasoned almond wood and grapevines.
It gets cool at night in the Berkeley hills, even in summer. Little bowls of soup make a perfect hors d’oeuvre for the occasion. Above is our version of a Thai coconut soup thickened with blended jasmine rice and garnished with grilled chicken, salted carrots, fresh cilantro & our very own red chili sauce.
What’s a party without sugar? We make sure that after the show there is cake! This one is made from McClelland Dairy butter and covered with Blueberry Sauce and Lime spiked whipped cream.
